The oil is very aromatic, yellow-greenish in color and its taste slightly bitter, spicy, and very round in the mouth. It leaves an aftertaste of fresh almond. It has a high content of polyphenols and oleic acid. In the kitchen, a perfect marriage of Picual is found with grilled meats, mixed eggs and vegetables, or with any type of fried fish.
