2025 Harvest Notes
This standout extra virgin olive oil blends the rare Morisca olive with three local cultivars: Hojiblanca, Picual, and Arbequina. Named after the yellow-beaked black birds that populate the Perales de Valdueza estate, Merula is crafted from olives harvested from south-facing groves and specifically blended to create a unique, milder personality than Marqués de Valdueza. Light, fruity, and versatile, Merula is perfectly suited for everyday use. Merula opens with delicate herbal and apple aromas. On the palate, it shows a sublime softness, with gentle notes of apple, pear, and fresh walnut.
Merula is ideal for both cooking and finishing. Use it to make classic tapas, like patatas bravas or gambas al ajillo, or smoky tuna-stuffed piquillo peppers. It also makes a great addition to salad dressings, marinades and herb-based sauces. Use it for roasting vegetables such tomatoes and eggplant, making mayonnaise, and even substitute it for butter in baking your favorite desserts.
