Spanish Rice


1 medium onion, finely chopped

1/2 cup green bell pepper, finely chopped

1/4 cup Olio’s Spanish Blend Extra-Virgin olive oil

1 cup raw long grain rice

2 cups low-salt chicken broth

1 cup tomato sauce

1/2 teaspoon ground cumin

1/4 teaspoon black pepper

1/4 teaspoon salt (optional)

Saute` onion and green pepper in olive oil over medium heat in a heavy

skillet 5 minutes or until tender. Add rice, stirring until it turns a

whitish gold, about 3 to 5 minutes. Add chicken broth, tomato sauce,

cumin, black pepper, and salt (if desired). Bring to a boil, reduce

heat to low, and simmer, uncovered, for 20 minutes or until rice is

done and liquid is absorbed.

Yield: 4 servings
