Ingredients:
1 whole egg
4 egg whites
1/2 cup sugar
1/3 cup brown sugar, packed
2 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon grated nutmeg
1/2 cup Olio Spanish Blend extra virgin olive oil
4 cups peeled apple chunks (use a firm apple such as a Granny Smith)
1/4 cup raisins, packed
1/4 cup chopped walnuts
Directions:
Preheat oven to 350 degrees F. Lightly oil a 9-inch square cake pan
and dust with flour. In a large bowl, beat egg, egg whites, and sugars
with a wooden spoon. In a medium bowl, sift flour, baking powder,
cinnamon, and nutmeg. Add half of the flour mixture to the egg
mixture. Stir in oil, then remaining flour mixture. Batter will be
fairly thick. Fold apples, raisins, and nuts into batter. Pour into
prepared pan. Bake for 1 hour or until lightly browned and a wooden
toothpick inserted into the cake comes out clean.
